Traditional Ugandan fruit breads
Hi, i was wondering if anyone out there has any traditional Ugandan recipes for fruit breads or something similar involving fruit. Thanks!

I think it is worth mentioning that "baking" as such is not a "traditional" way of preparing food for most communities, say if one went to some village X somewhere. (A big majority of people live in the country side). Most commonly eaten foods are prepared in other ways.
Most baked stuff is bought from bakeries rather than made at home. Fruits are mostly eaten fresh or turned into juices. That does not mean things are not rapidly changing, though. In urban areas, where increasingly more folks stay, the picture is considerably different.
A friend, who was very much involved with baking a while back, also commercially, immediately suggested:
"check recipe for banana cake or bread(same thing) and pineapple crumble or fruit crumble"
when I asked her about this.
Another thing to consider would be, the type of fruits commonly found.
That would include pineapples, oranges & similar fruits, papaya, mangoes, of course bananas, lots of them, 2 distinct "sweet banana" types, ...

What immediately comes to my mind is "Kabalagala", locally referred to by some people as banana "pancakes", which is however not baked, but deep fried.
It is made from cassava flour (http://en.wikipedia.org/wiki/Cassava) and a certain type of bananas. There is a recipe on this site. As noted there, the kabalagala best tastes with a specific type of bananas shown in the picture. Other types are ok, but not as good or sweet. Kabalagala is widely eaten in Uganda, often as a snack. There are some British teachers at my former school who I remember loved them.

Yes any baked good involving fruit is what i'm curious about. It doesn't necessarily need to be traditional, I am simply trying to track down something that is local/ regularly made/ native in Uganda involving a sweeter fruit bread or pastry. Thank you for you time!

I am not an expert on this, but I'm not sure there is "traditional" Ugandan fruit bread, but I will try to ask around. The fruit bread or cakes I know are not "traditional".

Another friend who used to do some baking, before leaving Uganda came up with "Pineapple Upside Down Cake" & "biscuits with pineapple or orange juice/jam" and "also pineapple pies". She did not have the recipes and also admitted "sounds more English", but then, lots of stuff to do with baking was introduced by the British and some of the folks attended British run schools with a strong home economics tradition.
