cooked potatoes (left over from last meal) ds
salt ds

This is a basic recipe and can be enriched by adding different ingredients. A good example is vegetables, like sliced tomatoes or paprika. The tomatoes can be added towards the end and do not have to get cooked through.
As the potatoes turn golden brown, an egg or 2 (beaten) can be added and mixed in such a way that it forms a coating on the potatoes.
The tomatoes and paprika could also be used to make a salad instead.
It can be eaten alone with ketchup or with fried eggs, bacon and lots of other things, including a wide range of tasty African sauces.
As you can see, one could do a lot with those left over potatoes.
Serve hot.
