Gonja West African style

Instructions
Peel the very ripe plantains or "gonja" as these are called in many parts of Uganda.
Cut into thin slices and sprinkle some little salt evenly over them.
In the meantime, heat some oil in a pan, enough for deep frying.
Add portions of the plantains and let them get to golden brown.
Serve hot.
Notes
NOTES : These can be eaten as a snack or part of breakfast. In some parts of West Africa, they are also eaten as part of main meals.
This particular recipe and the pictures were made while visiting friends from Guinea Conakry.
With less ripe plantains the taste can be varied further by adding some spices. Thinner slices are more likely to turn crispy to some sort of plantain or let me call them gonja chips. ;)
As you see, one can do more with gonja than steaming or roasting them.
